Caesar Salad Dressing
Yield: Makes 1 cup
Ingredients

corn oil

| 1/4 |
cup |
fresh lemon juice
|
|
|
| 1 |
|
large clove ( 1 tsp. ) minced garlic
|
|
|
| 1 |
tablespoon |
anchovy paste
|
|
|
| 1 |
teaspoon |
Dijon mustard
|
|
|
| 1/4 |
teaspoon |
sugar
|
|
|
| 1/8 |
teaspoon |
salt
|
|
|
| 1/8 |
teaspoon |
pepper
|
|
|
| 1/4 |
cup |
grated Parmesan cheese
|
|
|
Directions:
1. In blender ( or jar with lid ) place all ingredients except cheese. Blend 1 minute ( or shake vigorously ). Stir in cheese. 2. Store in refrigerator. Shake well before serving.
